Why you’ll love this recipe

  • Quick and easy. Making this incredibly delicious treat requires only 3 easy steps and 90 seconds.
  • Healthier. As the name suggests, we swap out typical cake ingredients like excessive butter and oil, along with white flour, and use more wholesome counterparts.
  • Easy to customize. Customizing this recipe is easy; you can add your favorite flavors and toppings to create the perfect mug cake.
  • Best texture. Don’t let the healthy halo fool you- This cake is just as moist and delicious and you’d expect.

Ingredients needed

No hard to find ingredients are used in this recipe. Here is everything you need:

  • Oat flour. A gluten-free and fiber-rich alternative to white or wheat flour. I like to make homemade oat flour, but any packaged brand works.
  • Tapioca starch. Binds the ingredients together and prevents the cake from becoming too dense.
  • Cocoa powder. Gives the cake a lovely and rich chocolate flavor. Opt for a sweetener-free cocoa powder.
  • Sugar. We use just a touch of sugar to sweeten the cake. Coconut sugar is a fabulous option as it is a natural sweetener, but white or brown sugar will work in a pinch. You can also use liquid sweeteners like maple syrup and honey.
  • Baking powder. Rising agent used to give the cake some lift and fluffiness.
  • Salt. Enhances the flavor of the cake.
  • Milk. I used unsweetened almond milk but use whichever milk you prefer.
  • Unsweetened applesauce. Instead of oil or butter, we’ll be using applesauce. It keeps the mug cake moist without adding excess calories or fat.
  • Vanilla. Adds flavor.

  2. Microwave. Transfer the batter to a greased mug and microwave for 90 seconds.
  3. Enjoy. Remove the mug cake from the microwave and let it cool for at least 30 seconds before enjoying it.

Can I use an oven instead?

Yes! If you don’t own a microwave or prefer to bake this, you can certainly do so. Grease an oven-safe ramekin and transfer the prepared batter into it. Bake at 180C/350F for 7 minutes, or until a toothpick comes out clean.

Tips to make the best recipe

  • Keep a firm eye while microwaving the mug cake. A little too long and you risk the cake becoming gummy and dry.
  • Use a sugar-free sweetener to cut the sugar out completely. Allulose or monk fruit sweetener are two of my preferred options.
  • Whisk the batter until it is smooth and there are no lumps. This will help to ensure that the cake cooks evenly.
  • Add mix-ins, like fresh berries, chocolate chips, or your favorite nuts. I like to drizzle peanut butter or almond butter over the top.

Storage instructions

Mug cakes are best enjoyed fresh so I don’t recommend storing it to enjoy later. If you do have any leftovers, cover in plastic wrap and keep it for up to one day.

FAQs

Why did my mug cake turn out rubbery? ›

A rubbery mug cake is indicative of being overcooked, or incorrect measurements. Please be precise with the measurements and stop cooking once the cake is soft but not wet on the top.

Are mug cakes okay to eat? ›

To make a double portion, we recommend using two separate mugs! Are microwave mug cakes safe to eat? Yes! Mug cakes are completely safe to consume.

Why is my mug cake so dry? ›

Many protein mug cake recipes suffer from dryness because they don't contain enough fat. They use wheat or oat flour, protein powder, and no eggs or oils. Naturally, it's going to be very dry with these ingredients.

Why is my mug cake not fluffy? ›

You didn't use self-rising flour

This type of flour gives these baked goods a light and fluffy consistency. Without all the right science involved with flour and other ingredients, cakes can be too dense and dry.

Why don't mug cakes use eggs? ›

It's easy to see why—most classic cake recipes call for two or three eggs and serve at least 10 people. So for a single-serving mug cake, just skip the egg; a whole egg will overpower the small amount of batter (and it's pretty tough to divide an egg in quarters).

Why does mug cake become hard? ›

Excessive whipping after adding flour - After adding the dry ingredients, just avoid too much whipping, especially when you have added the flour. It can result in activated gluten because when you beat the flour too much with a certain speed, the gluten gets activated, which forms a dry and hard cake.

Why does my mug cake taste bitter? ›

One of the most common misfortunes among bakers is that they are using too much baking soda or baking powder. Know that too much baking soda or baking powder in cakes will not just lead to a metallic and bitter taste, but it can also make a big mess in the oven as it will rise beyond expectations.

Can you eat raw mug cake batter? ›

Let's make this simple: No. Eating uncooked dough or batter can make you severely sick. The primary risk comes from flour.

Can I use baking soda instead of baking powder? ›

Baking powder is made of baking soda plus cream of tartar and cornstarch. Baking powder can be substituted for baking soda by tripling the amount of baking powder. Baking soda can be substituted for baking powder by dividing the amount of baking powder needed by 4 and adding twice that amount of cream of tartar.

Can you use water instead of milk in mug cake? ›

It is entirely possible to change this recipe to make it without milk. If it is an issue with lactose intolerance or other dietary restrictions, you can use almond milk, cashew milk, or oat milk. An almond cashew blend is my particular favorite. If you'd prefer not to have any milk at all, you can use water instead.

Why did my mug cake fail? ›

Don't overfill your mug with ingredients

Even with the perfect mini whisk, things can still go wrong when making a mug cake. One big mistake involves overfilling the mug. Just like with any other baked good, mug cakes rise during the cooking process.

Can you eat undercooked mug cake? ›

Can we keep mug cake in the fridge? ›

However, if for some reason you have leftover mug cake or you want to make it in advance, it can generally stay fresh for up to 2 days at room temperature, and up to a week if refrigerated.

Why did my cake come out rubbery? ›

If you mix incorrect measurements of sugar, butter, and eggs, the cake will become rubbery. You will notice that you have overmixed, the batter when the dough produces a smooth or watery texture. When the dough is overmixed, the air bubbles trapped in the mixture will be lost.

Why did my cake come out gummy? ›

Why does my cake have a gummy streak in the center? Developing too much of the flour's gluten can make the cake rise beautifully in the oven, but sink as soon as you pull it out. The sinking part is what makes the dense and gluey streaks. This can be result of over-creaming the eggs, butter and sugar.

Why does my cake feel chewy? ›

Over-beating

Not only does it make your cake chewy, it also beats the air out of your batters and makes your sponge cake not spongey at all.

Why are my cupcakes dense and chewy? ›

Too much flour will absorb all the moisture, making for a dense and dry crumb. Also, under whipping the butter may cause your cupcakes to be dry and dense. You want to whip the butter to the point where it's fluffy and airy, the air in the butter will provide lift, and fluffiness to the final product.
