With winter in full swing and the leaves beginning to change comes this favorite low-histamine recipes: an apple cider pot roast. You can also try this traditional tomato-free pot roast recipe! While this pot roast is not as common to be made, it’s certainly an enjoyable one!

Low Histamine Pulled Beef Favorites

This apple cider chuck roast recipe is one of my favorites. While the name may make readers assume this is AC vinegar, it is actually honey crisp cider that gives this instantpot pot roast recipe a delicious sweet and savory flavor.

I may be biased but this truly is one of the best pot roast recipes I’ve ever had! Although I could eat this over and over again, below are a few of my favorite ways to enjoy this if you make extra, or leftovers are saved.

Pulled Beef Sandwiches: I love having slow cooked pulled potroast sandwiches made with a delicious sauce such as horseradish, pesto, mustard, salsa macha, and topped with caramelized onion and your favorite cheese or greens.

Enjoy it with Dairy-Free Mashed Potatoes: Mashed potatoes are always the perfect addition to a slow cooked beef recipe. These mashed potatoes are creamy, buttery, and also can be made fully vegan! I always make extra so that I can individually freeze it to be enjoyed later.

When I think of pot roast, it always reminds me of home. Growing up we always enjoyed crockpot pulled beef recipes. It was easy for my mother to build flavorful meals in a very effortless way, not to mention delicious! In this recipe, we’ll use an instantpot but the directions for a crockpot pulled beef are also noted below!

This recipe is mouth-watering, sweet, savory, and has an array of flavors that remind us of fall and winter just as the leaves begin to come down. Flavors from nutmeg, thyme, apples, and stewed beef always remind me of Christmas. I hope you love it as much as I do. Don’t forget to freeze it into single servings if you’d like to reheat it later on which I love to do!

Low Histamine Recipe: Apple Cider Pot Roast with honey crisp apples

Instant Pot Roast Recipe made with sweet honey crisp cider, apples, onions, and sweet & savory ingredients.

Ingredients

  • 2 pounds boneless organic beef chuck
  • 2 tbsp liquid aminos
  • 2 tsp salt
  • Fresh nutmeg
  • 2 tbsp butter that has salt
  • cup gluten-free all-purpose flour
  • 1 cup veggie stock
  • 1.5 organic honey crisp cider
  • 2 large hard organic honey crisp apples
  • 4 large carrots 1 cup medium diced
  • 6 large sticks of celery about 1-2 cups medium diced
  • 2 large yellow onions
  • 1 head of garlic
  • Fresh thyme or 1 tbsp herbs de provence
  • Black pepper as desired
  • Fresh curly parsley as desired.

Instructions

  • Wash and chop your veggies into large diced pieces.

  • Take out your meat for about 20-30 minutes to let it come to a more room temperature.

  • Set your pressure cooker to sautee.

  • Add your 1 tbsp of butter and follow with your large sliced onions. Caramelize until slightly browned – deglaze with a small amount of cider or stock. Remove from heat and add your other tbsp of butter to your instantpot.

  • Cut your beef chuck in half if needed. Dust with flour and follow by adding it to your instantpot. Brown fully on all sides and follow with your remaining ingreidents except your parsley and half of your apples.

  • Hit cancel on your instant pot and then hit "pressure cook" and set it to high for 1 hour to follow for another 30 if it needs further time to cook. Make sure the pressure valve is sealed!

  • Once the timer goes off on your instant pot, slowly release the pressure valve and once ready, open it to add your remaining apples.

  • Close the lid and hit the timer for 30 more minutes under high pressure cooking. Once complete, let the pressure release, open, & enjoy!

Crock Pot Or Stovetop Instructions

  • Using the same preparation steps as above, sear your meat on all sides making sure your fat has been rendered down in a dutch oven or pan over hot stovetop.

  • Follow by adding it to your slow cooker and cook for 4-5 hours on low.
